CARROT SPRING ONION CURRY

Preparation Method: 30 min
Ingredients:
5 big carrots
1 bunch spring onions
mustard seeds
cumin seeds
ginger garlic paste
red chillies
garam masala
salt to taste
oil
Preparation Method:
1. Heat oil in a pan and fry mustard seeds, cumin seeds, red chillies and ginger garlic paste
2. Add diced carrot and spring onions, sprinkle salt and cover with lid and cook for 10 minutes
3. Once the carrot is boiled, add garam masala and fry for few minutes and switch off the stove
Serve with rice.

ROASTED CHANNA DAAL POWDER (PUTNALA PODI)


This is a famous south indian powder (or podi called in telugu), which is mixed along with rice and oil/ghee. This powder can be made very easy & fast. This powder can be used for few weeks and will be useful, when you dont have the time to prepare curry. This goes very well with rice.

Preparation time: 15 minutes

Ingredients:

Roasted channa daal (putnala pappu) 250 gms
redchillies 15
2 tbsp cumin seeds
salt to taste

Preparation method:

1. Fry the Roasted channa daal (putnala pappu), cumin seeds and redchillies together, without oil for few mintues, till they turn into light brown.
2. cool down and grind them along with salt.

MAJJIGA UPPINDI

Preparation time: 12 minutes


Ingredients:

1 and 1/2 glass butter milk
1 glass rice flour
mustard seeds
cumin seeds
urad daal
channa daal
green chillies
red chillies
curry leaves
oil
salt to taste


Preparation Method:

Step1:
Add 2 tbsp of oil, add mustard seeds, cumin seeds, urad daal, channa daal, curry leaves, green and red chillies.







Step2:

Add 1 and 1/2 glass of butter milk and salt







Step3:
Watch the below video to mix the flour




Step4:

Switch off the stove and cover the lid for 7 minutes

Serve with Mango pickle or any of your favourite pickle

SEASEME SEEDS POWDER (NUVVULA PODI)



This is a famous south indian powder (or podi called in telugu), which is mixed along with rice and oil/ghee. This powder can be made very easy & fast. This powder can be used for few weeks and will be useful, when you dont have the time to prepare curry. This goes very well with rice.
Preparation time: 15 minutes
Ingredients:
seaseme seeds 250 gms
redchillies 15
salt to taste
Preparation method:
1. Fry the seaseme seeds and redchillies together, without oil for few mintues, till the seaseme seeds turn into light brown.
2. cool down and grind them along with salt.
Tip: this powder can be sprinkled on vegetable fries(before switching off the stove), like bottle gourd, ridge gourd,snake gourd and brinjal

MUVVA VANKAYA (BRINJAL CURRY)

Preparation time: 1 Hr
Ingredients:
9 small brinjals
4 medium sized onions
red chillies (according to your taste)
tamarind jucie (diluted)
turmeric
seaseme seeds
oil
salt to taste
Preparation Method:
1. Cut brinjal into 4 halves, without removing the top stem (as shown in the picture).
2. In a big bowl, add the diluted tamarind pulp, turmeric, salt and boil the cut brinjals untill they are soft. Drain the water and keep them aside.
3. Fry the seaseme seeds in a pan, without adding oil, and keep them aside
4. Heat 2 tbsp oil in a pan, add chopped onions, red chillies and fry well till the onions become soft
and keep aside till they are cooled.
5. Grind the fried seaseme seeds, onions and salt to a fine paste
6. Stuff the above paste into the boiled brinjals
7. Heat 2 tbsp of oil in a pan and fry the brinjals on all the sides, till they are dark brown (as shown in the picture)
Serve hot with rice and ghee.

BHINDI MASALA

Preparation time: 30 min

Ingredients:

1/2 kilo bhindi
1 onion
1 tomato
1 tsp turmeric
4 tsp rice flour
2 tsp chilli powder
4 garlic pods
2 tsp coriander seeds
2 tsp jeera

Preparation method :

1. wash and chop bhindis

2. grind garlic, jeera , and coriander seeds into coarse powder.

3. In a big bowl add bhendi, chilli powder, salt, turmeric, rice flour, grinded powder, 2 tsp oil, mix well and keep aside.

4. Heat oil in a pan, add above mixture, put a lid and fry well till they are half cooked, then add chopped onions and tomatoes.

5. cook well till they become soft.

CARROT RICE

Preparation time:30 min

Ingredients:

2 cups cooked rice
3 carrots
1 big onion
3 green chillies
3 cloves
1/2 inch cinnamon
5 cashew nuts
2 tsp dhania powder
turmeric
oil
salt to taste

Preparation method:

1.Peel carrot and cut into small pieces and grind them coarsly (or grate the carrots)

2. Heat oil in a pan, add onions, green chillies,cinnamon,cloves, and fry well till onions become soft.

3. Add grated carrot and fry well till the raw smell dissappears, then add turmeric, salt, and 2 tsp dhania powder, and keep aside.

4. Take a big bowl,mix the cooked rice and carrot mixture evenly.

5. Decorate with fried cashew nuts.
