ADAI DOSA(DAL DOSA)



Ingredients :


1 cup raw rice

1 cup all varieties of dals(moongdal,channa dal,urad dal,toor dal )

2 tsp methi seeds

5 red chillies

1/2 inch ginger

3 small onions(sambar onions)

curry leaves

jeera

salt to taste


Preparation method :


1.soak raw rice,all dals,methi seeds, redchillies,in water for 6 hours.


2Take a blender,grindthem with ginger,sambar onions and salt like a corse paste.


3. Ferment this batter for 6 hours,then add jeera,chopped curryleaves.


4 Make dosas using this batter.


serve with chutney.

CORN RICE

Preparation Time: 15 mins
Ingredients:
1 cup cooked corn
2 cups cooked rice
cinnamon
clove
cardamon
elachi
4 tsp jeera
corriander powder
garam masala
pepper powder
green chillies
oil
salt to taste
Preparation Method:
1. Heat oil in a pan, add jeera, cinnamon, clove, cardamon, elachi, green chillies and fry well
2. To this, add the cooked corn, masala powder, corriander powder, salt and fry well untill the flavour is infused into the corn
3. Add rice and mix well for 5 minutes. Before switching off the stove, add pepper powder.
Serve hot with taramind chutney or raita or tomato ketchup
Note: If you do not have fresh corn, you can use frozen or canned corn

CAPSICUM METHI MASALA

Preparation time: 20 minutes
Ingredients:
250 gms Capsicum
green chillies
mustard seeds
cumin seeds
urad daal
chilli powder
masala powder (all spices mix)
dhaniya powder
jeera powder
kasuri methi
oil
salt to taste
Preparation Method:
1. Heat oil in a pan and fry mustard seeds, cumin seeds, urad daal and green chillies
2. Add capsicum and salt and cover with lid for 5 minutes
3. Take a small bowl with 25 ml water add the masala powder, dhaniya powder, red chilli powder, jeera powder and kasuri methi and mix them well untill they dissolve in water
4. After the capsicum is well cooked, add this masala mixture and fry for 2 minutes and take off from the stove
Serve hot with rice or roti
Note: Few people do not like the smell of capsicum. With this masala mix, this smell dissapears

RAJMA MASALA

Preparation time :30 min

Ingredients:

1 cup rajma
1 big onions
2 tomatoes
ginger garlic paste
green chillies
masala powder (all spices mix)
corriander powder
kasuri methi
cumin powder
red chilli powder
salt to taste
oil

Preparation Method:

1. Soak rajma in water atleast 6hours before cooking
2. Pressure it for 5 whistles and keep aside (do not throw away the remaining water)
3. Heat oil in a pan, add ginger garlic paste, onions and fry them till they are light brown
4. Next add tomatoes and cook untill they are soft
5. After few minutes add the green chillies, masala powder, chilli powder, coriander powder, cumin powder, kasuri methi and fry well
6. Now add the left over water of rajma, in the pan
7. After few minutes, add the cooked rajma and fry untill the masala mixes well with rajma

Serve with roti or rice

ALOO CAPSICUM FRY

Preparation time: 20 min

Ingredients :

2 potatoes
2 capsicum(red and green)
1 big onion
3 redchillies
1 tsp garam masala
1 tsp ginger garlic paste
4 tsp oil
salt to taste



Preparation method :

1. Heat oil in a pan add onions and fry well till they become soft, add ginger garlic paste.

2. Now add diced potatoes, capsicum pieces

3. Add salt and cover with lid.

4. Cook till they become soft.

5. Sprinkle garam masala.

Serve with hot rice or roti

INSTANT GONGURA CHUTNEY

Preparation time: 5 min

Ingredients:

1 big onion
1 tomato
1 tsp oil
4-5 tbsp priya gongura pickle

Preparation method:

1.take a pan and add 1 tsp oil, finely chopped onion and fry till they become soft

2.Add chopped tomatoes and fry well

3 Add priya gongura pickle and fry well till all is mixed well

Instant gongura chutney is ready, serve with hot rice and ghee.


Note:If u dont have priyapickle u can use any other pickle brand.
